The 2024 agricultural year was marked by lower temperatures and higher rainfall compared to the previous year. The mild and rainy winter benefited the development of the olive groves, especially the rainfed ones.
The harvest began in October and continued until mid-November, allowing us to collect this variety of olives at different stages of ripeness, resulting in an olive oil that truly expresses its character. The Cobrançosa olives are delivered to the Esporão mill just a few hours after harvest and immediately processed. Extraction begins with rapid fruit milling, followed by passage through an active heat exchanger, a system that shortens extraction time and preserves the aromas characteristic of this oil. The olive paste is then centrifuged, mechanically separating the oil from the pomace. The oil is immediately filtered and bottled. Extraction is carried out cold, at a maximum temperature of 24 ºC.
